Vegan (kinda) Chocolate Chip Cookies

For years I wanted to have that one recipe that everyone requested of me, that my family and friends were excited to have at the party, I wanted my signature dish – not once did I think it would be something as simple as a chocolate chip cookie, but to my surprise they are! My friends and family absolutely love these cookies and they are SO easy to make. I have been baking these for close to 5 years now and they never disappoint. I hope you enjoy!

Ingredients
1 cup Brown Sugar
1/2 cup Coconut Oil (melted or liquid form) – I prefer Trader Joe’s brand
1/4 cup Almond Milk
1 tablespoon Vanilla Extract
2 cups All Purpose Flour
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1/2 teaspoon Salt
1 cup Chocolate Chips (this will make the cookies fully vegan or not depending on the choc chips you choose) – Trader Joe’s has awesome vegan chocolate chips

Directions
1. Pre-heat oven to 350 degrees, line cookie sheet with parchment paper
2. Mix brown sugar and melted/liquid coconut oil thoroughly
3. Add almond milk and vanilla extract – you want it to be a semi-watery consistency
4. In a separate bowl – mix all dry ingredients – flour, baking powder, baking soda and salt
5. Add dry ingredients to brown sugar/wet ingredients and mix until combined
6. Mix in chocolate chips – this may be difficult, as they might not stick like normal chocolate chip cookies, it’s okay, but try to fold in the chips as much as possible.
7. Use small tablespoon size scoop to create a ball, roll it in your hands (you may have to add some chips back into the ball of dough) and flatten out halfway in a cookie shape onto a baking sheet with parchment paper – it should make about 17-19 cookies.
8. Bake for 8-12 minutes depending on your oven, start with 8 and add time if needed.
Tip – Bake until a light tan color, let rest on pan for 5 min, then move all cookies to a cooling rack for another 5-10 minutes before enjoying!
